Lettuce by the yard

 Dr. Laura del Valle, physician, community activist, Zen Buddhist, and now organic gardener.  Just north of her wellness retreat at Mar de Jade, she has started a 16 hectare organic farm to supply the resort with vegetables and fruits.   And not a pesticide in sight!  Lots of lettuces, arugula, beans, nopales, peanuts,  spinach, onions, and jamaica.  Some of these crops are labor intensive and provide employment for local workers.  We ate beautifully from this farm and even got to plant some seeds.
